Thirsty Thursday: Watermelon Edition

So what do you do with a 15-pound watermelon you got at your local farmer's market besides dead lift it to get MObama arms?
You make yummy drinks from it!

Here's how:
 : Watermelon Margaritas :
Recipe adapted from Martha Stewart
Makes 4
1/2 cup sugar
1/2 cup water
12 ounces watermelon cubes (about 2 cups)
1/4 cup fresh lime juice
3/4 cup white or silver tequila
Lime wedges

In a small saucepan, bring sugar & water to a boil over high. Reduce to a simmer and cook until sugar dissolves, 3 minutes. Let syrup cool in a bowl or pop in your freezer for about 20 minutes.
In a blender/food processor, puree watermelon cubes until smooth(this literally takes less than a minute!). Strain through a fine-mesh sieve, pressing on solids, into a pitcher (you should have about 1 cup juice).
Stir in syrup, lime juice, and tequila. Fill salt-rimmed glasses with ice, then pour margarita mixture over top. Garnish with lime wedges.

: Watermelon Mojitos :
 Recipe adapted from MY IDOL
Makes 6
30 large fresh mint leaves
3 to 4 thick slices fresh watermelon (about 3-4 cups)
12 ounces clear rum
1/3 cup simple syrup
6 tablespoons freshly squeezed lime juice (3 limes)
Sprigs of mint and spears of watermelon, for serving

Mash the mint leaves in the bottom of your pitcher with whatever you have around the house: Mortar & pestle, muddler, blunt end of wooden spoon (make it work).
Put the fruit into a food processor fitted with the steel blade and purée. Strain through a fine-mesh sieve, pressing on solids, into your pitcher
Next put the rum, simple syrup(use a light hand, you probably already have a sweet watermelon!), and lime juice and stir to combine.
Garnish with sprigs of fresh mint and spears of watermelon.

These recipes might get you through about half of your watermelon, so cut the rest up and bring over to your neighbor's house to enjoy!

Mojitos are the BEST in the summer! I've never tried a watermelon one out...I need to get on this!

Um, I'm so far behind in catching up on your blog...but this post spoke right to my heart! I'm in a huge (and I mean MASSIVE) mood for making watermelon drinks as of late. I've added this to my inspiration board!
